The physicochemical characteristics of the meat from lambs fed diets containing whole or disintegrated cottonseed, associated not with calcium lignosulfonate (LignoCaSO3), were evaluated. Thirty non-castrated Dorper x Santa Inês lambs, an average 24.9 ± 3.6 kg and four months age confined for 60 days in collective stalls distributed a completely randomized design six replications. After slaughter, by means contrasts, averages parameters semimembranous semitendinosus muscles analyzed. cottonseed increased cooking loss ash, reduced muscle weight, water holding capacity red intensity. disintegration shear force without LignoCaSO3, protein pH additive. luminosity values LignoCaSO3. addition LignoCaSO3 weight muscle, protein, pH, strength intensity red. Moisture, lipids yellow influenced diets. Even changing physical-chemical characteristics, does change quality
